My favorite cookie… April 5, 2011

It was inspired by the candy bar Almond Joy and used as a substitute for those DELICIOUS little Girl Scout cookies- Samoas.

1 cup butter, softened

1 cup white sugar

1 cup packed brown sugar

2 eggs

2 teaspoons vanilla extract

1/2 tsp coconut extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups semisweet chocolate chips

1 cup toasted coconut flake


Preheat oven to 350 degrees. Cream  butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and coconut extract.  Stir in flour, salt and baking soda. Once combined, add one cup of the chocolate chips and 3/4 cup of the coconut. Drop by large spoonfuls onto ungreased pans.  Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Once ALL OF THE COOKIES are done: melt remaining chocolate chips in the microwave in a plasic bag (add a littttttle oil to keep it smooth). Snip the tip of the bag once the chocolate is smooth (this acts like a piping bag). Drizzle chocolate over all baked cookies. Sprinkle with remaining coconut before chocolate dries!
