1lb pork loin, cut into very thin strips
1 head of broccoli (I use just the florets, but if you like the stem, go ahead)
3 gloves garlic
1/2 tsp ground ginger
1/4 c soy sauce
2 tbsp oil
3/4 can chicken broth
8oz fresh mushrooms
1/4 onion, chopped
Coat the thinly sliced pork loan with salt, pep and a light dusting of corn starch.
Heat the oil in a frying pan. Bring 2″ water to boil in a sauce pan.
When the oil is hot, add the pork and fry for 1-2 minutes. Pork should be slightly underdone when you take it out of the pan. That’s okay. Set the pork aside on a plate. Add the onion and mushrooms and fry for two minutes. Set them aside with the pork.
Once the water is boiling, add your broccoli for ONE MINUTE. Remove it from the water and set it with the pork.
In the frying pan (hot, hot) add the chicken broth, chopped garlic, ginger and soy sauce. Bring to a boil. Add 1 tsp of corn starch slurry to bring to a runny-gravy-like consistency. Dump this mixture over the pork, broccoli, mushrooms and onions. Stir.
I serve over rice. Pork is super tender and flavorful. Love it!
